As Cinco de Mayo approaches, let's explore the rich flavors of salsa martajada, a beloved salsa. The word "martajada" refers to the traditional method of grinding ingredients using a stone mortar and pestle, a technique passed down through generations.

Recipe for Salsa Martajada:


Ingredients:

  • 3 large tomatoes, grilled and quartered

  • 1 white onion, grilled and chopped

  • 3 cloves garlic, grilled and peeled

  • 2 serrano chilies, grilled and stemmed

  • 1/4 cup fresh cilantro leaves

  • Salt to taste

Instructions:

  1. Grill or char the tomatoes, onion, garlic, and chilies over an open flame or in a dry skillet lined with aluminum foil until slightly blackened and softened.

  2. Transfer the grilled ingredients to a molcajete (stone mortar).

  3. Using a pestle, grind the ingredients together until well combined and slightly chunky.

  4. Season with salt to taste.

  5. Serve immediately or refrigerate for up to 2 days.
